Ingredients
- 1.5 lbs boneless, skinless chicken breast, sliced into strips
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 large yellow onion, sliced
- 3 tbsp olive oil
- 2 tsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1 lime, juiced
- 8 small flour or corn tortillas, warmed
- Toppings: sour cream, shredded cheese, cilantro, avocado
Instructions
- 1Preheat oven to 425°F and line a large sheet pan with foil or parchment.
- 2In a large bowl, toss chicken, peppers, and onion with olive oil, chili powder, cumin, smoked paprika, garlic powder, and salt until evenly coated.
- 3Spread everything in a single layer on the sheet pan.
- 4Roast 18-20 minutes, stirring once halfway through, until the chicken reaches 165°F and the peppers are charred at the edges.
- 5Squeeze fresh lime juice over the pan as soon as it comes out of the oven.
- 6Serve in warm tortillas with your toppings of choice.
Double the seasoning mix and keep it in a jar — it turns this into a 10-minutes-of-effort dinner the second time around.
