Ingredients

  • 1.5 lbs boneless, skinless chicken breast, sliced into strips
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large yellow onion, sliced
  • 3 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1 lime, juiced
  • 8 small flour or corn tortillas, warmed
  • Toppings: sour cream, shredded cheese, cilantro, avocado

Instructions

  1. 1Preheat oven to 425°F and line a large sheet pan with foil or parchment.
  2. 2In a large bowl, toss chicken, peppers, and onion with olive oil, chili powder, cumin, smoked paprika, garlic powder, and salt until evenly coated.
  3. 3Spread everything in a single layer on the sheet pan.
  4. 4Roast 18-20 minutes, stirring once halfway through, until the chicken reaches 165°F and the peppers are charred at the edges.
  5. 5Squeeze fresh lime juice over the pan as soon as it comes out of the oven.
  6. 6Serve in warm tortillas with your toppings of choice.

Double the seasoning mix and keep it in a jar — it turns this into a 10-minutes-of-effort dinner the second time around.
